Since I was making a day trip to Dick’s Classic Garage Car Museum in San Marcos, Texas, I asked the Curator, Mr. Thom Fortney a good place to eat lunch nearby. He suggested Hays County Bar-B-Que & Catering. Wow….GREAT recommendation Thom!!! Thanks!!
Upon my arrival to a rather simple looking restaurant, I see these two beautiful ladies leaving, (I asked and they confirmed it was a thumbs up BBQ joint!) …if it’s good enough for 2 Beauty Queens…

I ordered the Sausage (non Jalapeno) Sandwich, Slice of Brisket and Beans. The brisket darn near melts in your mouth…soooo good! The Sausage was VERY different from any other sausage I’ve had…hard to describe, but way more full of actual meat and flavor than typical and DAMN good!!! Mr. Serna, Sr. Pit Master said it was because they make their own sausage and it’s the high quality meat that goes into it. I just can tell you that I would EASILY, HIGHLY recommend either but after hearing one lady go on and one about their Turkey, I was sad I didn’t try that too as she made it sound sooooo wonderful!…Next time!!!
And 2017’s Texas Monthly’s List of the 50 Best BBQ Joints just came out days ago and guess who was on it again!
I learned that Michael, son of Michael Sr. is helping run the Hays Co. Burgers & BBQ in Martindale, Texas and of course Dad is very involved too :). As I had missed meeting Michael Hernandez, Sr. at the Hays Co. Bar-B-Que in San Marcos, he asked if I could stop by the burger place on my way home. Soooo glad I did!! Although I was still stuffed beyond belief from the earlier BBQ, Mr. Hernandez insisted I had to at least try a bite of a cheeseburger…I did and yep….great, top-notch burger!! Also, the Hernandez family is just the kind of people you love to see as a success story!! Super nice, friendly and you can tell how passionate they are about only serving top-level food and how important that, cleanliness and customer service is to this family!! I’ll be keeping in periodic contact with them just because they are so nice too! (For sure gonna go back and eat at BOTH places too!).
The lovely Ms. Maebeth Bagley, past Mayor of Martindale (1996-2004), Texas had just finished a delicious burger meal. As Mr. Mike Hernandez thanked her for visiting, come to find out Ms. Bagley’s Dad, Mr. David Bagley built the building in 1930 that now proudly bears the Hays Co. Burgers & BBQ sign and the safe that adorns the eating area was actually her grandfather’s safe – Mr. W.W. Bagley!! Small world! Too bad my photo didn’t do justice to Maebeth Bagley’s gorgeous blue eyes!!! Oddly enough, Ms. Bagley’s brother, Walter was also Mayor!
